Better than the 1st

This was the second wedding cake I have done, and I learned a lot from the 1st which made this one much easier. It turned out good.

This next picture stems from one of my artistic brain moments. Being a fishhing hobbyist and trying to think of an idea for a fondant project, the perfect idea was a mounted bass. So I grabbed some fondant and dove in head first. A month later, here ya go.

I'm finally finished


Course 4 final cake
After 16 straight Monday nights I was finally finished with my classes. I was ready to be done but learned so much. It is amazing how much thought and preparation has to go into cake decorating especially if you want to do it right. Here’s the course 4 final cake.

1st Wedding cake
My co-worker approached me about doing her wedding cake. I had never done a wedding cake at this point but I can do anything I set my mind too so I told her I would. After a couple months of thought and preparation I got it done. There was things I learned during the process and things I will do different next time but all in all she liked it.

Course 3 final cake
The final cake for course 3 was by far the most elegant we did in the classes. The classic wedding was fun, we had to learn fondant flowers and some tricky borders but all in all I learned a lot.

In course 3 we had to do 2 cakes. Course 3 was a little easier because it was mainly working with fondant. This cake was probably the easier one I did during my classes.

Momma's B'day cake
After seeing the final cake for course 2 my mother wanted a similar cake for her B’day. So to practice my roses this was a prefect cake for me. She loved it.

Course 2 final cake
Like I said earlier, I took decorating classes to learn the fine art of cake decorating so my next cake was the final cake for Course 2. This course was the most changeling of the 4 because the techniques we learn were using royal icing. I was just glad to finish the course.

I did this for my nephew’s 6th B’day (the one I did the 1st sponge bob for). This was difficult because butter cream is so much more difficult to get smooth. I was please with the finished product.

My own b'day cake
This next one was a humdinger not because of how the cake turned out but because of who it was for. My mother approached me about making a cake for her co-worker's son and the lady was doing a pig themed party because her son’s favorite toy was a little stuffed pig (or so I was told). So I was to do a pig cake. My mother works down the street from me and the party was for that Saturday, so, I delivered the cake to my mother who was going to give it to the lady when she arrived at work (again so I was told). I even called my mother to see if the lady liked the cake and she said she was amazed. So to shorten the story a little. My family was planning on eating out at a local BBQ joint that night and I was to meet them there. I arrived the same time as my mother but my wife and sister were already in. I stayed outside to smoke a cigarette and as I walked in and turned the corner much to my SURPRISE, there was my whole family shouting "SURPRISE!" My wife and I share the same birthday which was two weeks away and since I was turning 30 my wife wanted to do something special. She had planned (with my mother’s help) this party for me and yes, I made my own birthday cake.

My wife and I were to bring a dessert for a Easter gathering at her grandmother's house, and being as I decorate cakes it was only fitting that we take a cake. So once again my mind started to churn for ideas to make something not so traditional. So after I was done my Easter "frankencake" was born.

Since I live in Alabama and Alabamians love college football, I’ve had a chance to do a few of the most popular teams (Auburn and Alabama) unfortunately I’ve only done one of my favorite team... WAR EAGLE!!! This cake was for my mother’s co-workers son. Enjoy!

1 down and 3 to go


Course 1 final cake
After my caketastrophe I was able to finish the class. One of the main reasons I took cake decorating classes was for buttercream decorating. I could do the fondant and gum paste stuff using my artistic sense but the buttercream was different. I’m proud to say I can finally do roses.

My 1st Ohh S#!t Experience
Up to this point I had never had any formal decorating training. So I decided to take Wilton decorating classes. I was pumped about it too. I was almost finished with a practice cake I was doing the night before class to make sure I was ready. I did a three tier cake and had almost finished putting on the border when I reached for another icing bag and, well, here’s the picture:

Largemouth Bass Cake
This cake is exactly like the F-150. As my brain started working the details increased. I bought an air-brush machine during the process so I was a dangerous man! Anyway, this was a fun one and again the WOW factor was in order.

My co-worker approached me with the idea of making a pick-up truck for her son’s 16th birthday. So as I started to tackle this cake my mind started going in a thousand creative directions. One thing I take pride in when I do my cakes is putting so much detail into them that when the customer sees it they say WOW. At the time I hadn’t done anything like this before so this was an intense project and at times seemed to be too much but after a lot of patience I finally got it done. My co-worker loved it and her son’s expression was WOW.

Blue Bird and His House

This was my 1st attempt at hand molding fondant. This was done without a picture to go by. The bird house was done as a hollow structure. This project was challenging and fun to do. The more I do the more I enjoy it and start to explore other mediums of cake decorating.
